Spend A Sunday With Sock Monkey

There is nothing quite like spending a Sunday afternoon with the person that you love. But, when that is not possible, the second best option for me is to spend my Sunday afternoon thinking about the person that I love. So, that is exactly what I did. Sock Monkey and I decided to document our day and put together a little video for our one love, Kelsey!

Dinner Date Across the Country

On February 27th, Allison and I set out on yet another grand adventure, this time in the department of culinary arts! We settled on black bean and sweet potato enchiladas that were both gluten free and scrum-didalee-umptious. Of course, our dinner date was performed live via skype. Allison was far better prepared than I with her extremely stylish apron...not to mention hot pan holders. She pretty much gets into any of our activities with whole-hearted enthusiasm, which is beyond admirable.

The actual preparation and cooking process was pretty easy. Throughout the process of dating long distance we've grown to appreciate some of the few perks that come of it...for instance, the massive addition of garlic to our enchiladas, probably twice as much as was called for (at least I did!). When all was said and done we both agreed the enchiladas provided a divinely unique flavor of sweet and spicy with the potatoes and the green chille sauce. We had a blasty blast making it and permeating our kitchens with the neat memories of cooking together...well as together as we could be!

I can't wait for our next date, darlin'! Thanks for making cooking such a fun experience! I'm sorry we'll never get the two hours back following dinner when I decided that watching "A Perfect Getaway" was a great way to cap off the evening. I will make it up to you.
